Wow, what a marvelously rich, full-bodied, and powerful Tannat, but with impressive energy and tension.  It boasts balanced, robust tannins and loads of perfectly ripe dark berry fruit, including blueberry compote, alongside sweet and savory spices, and pure, natural, balanced acidity that keeps this wine grippy, fresh, and bright. The tannisn are massive and powerful, and I’d hold onto this until 2027, until popping corks.  Consumers are in for a real treat when this is offered through the tasting room outside of Fredericksburg. A captivating expression of Tannat that promises to impress. Winemaker Tony Offill, who started here in 2017, has made marked improvements, and with Napa-based consultant Jean Hoefliger, who began consulting with William Chris in 2022, the transformation of these wines is incredible, and they are among the best wines being made in Texas today. 

The La Valentía 100% Grenache, sourced from Bounty Harvest Vineyard in Gaines County, sits just outside the Texas High Plains AVA but benefits from its high-altitude terroir at 3,500 feet. Grown in sandy loam and caliche (limestone) soils, the wine undergoes a 5-day cold soak in stainless steel with gentle pumpovers before aging for 12 months in neutral French oak with bâtonnage. This Grenache shows ripe, pure red berry fruit complemented by brown baking spice notes. Medium-bodied, it is framed by firm, grippy tannins with a chocolaty edge, leading to a finish highlighted by blood orange acidity and a distinctively salty, crushed granite minerality.

The Fire Oak Vineyard, located in Mills County just north of the Texas Hill Country border, produces this blend of 55% Carignan and 45% Mourvèdre, which is brimming with bright red-toned fruits and a savory baking spice character. Medium-bodied, the wine offers mocha-rich, fine-grained tannins that provide structure, with candied red berry fruit carrying through to a rich, satisfying finish. A well-rounded and flavorful expression of these two varieties.

Whole-cluster pressed with some saignée. A blend of Counoise, Cinsault, Mourvèdre, and Tannat. Bright, ripe strawberry and cherry fruit lead, accented by orange peel and grapefruit zest. The palate shows great tension and energy, making this a truly pleasing, easy-drinking wine for summer.
Fermented in stainless steel and oak-aged for roughly six to eight months before bottling. Lovely, subtle aromatics of citrus oil and honeysuckle lead into a medium-bodied palate with a silky, satiny mouthfeel. Bright citrus zest and citrus oil keep the palate lively, fresh, and full of energy, carrying through with good length and tension. You would be hard-pressed to detect any oak influence apart from the beautifully silky texture.
Fermented entirely in stainless steel, with a small portion of Viognier fermented in barrel. The nose is beautifully alluring, revealing citrus, white peach, orange blossom, honeysuckle, and a hint of shiso. The palate is lush, creamy, and seductive, yet balanced by bright acidity and a crisp, chalky minerality that extends through the long, floral finish. Bright, rich, and poised.
Aged entirely in stainless steel for six months before bottling. Elegant white peach, apricot, and honeycomb aromas lead, with a lovely weight and silky fruit depth from partial malolactic fermentation. The palate leans toward poached apples, guava, and white peach, layered with pressed wildflowers and a subtle baking spice character. Nicely persistent on the finish. 92
Aged for about six to seven months in 100% stainless steel before bottling. Bright, ripe tropical fruits lead the nose, joined by nuances of white peach, apricot, and white flowers. The palate shows a chalky minerality that builds through to a zesty, energetic finish. 91-92
In Texas, this grape tends to show more florality and structure, says Zachary Raines, winemaker for Augusta Vin—”probably from that shorter growing season.” The wine is fermented in stainless steel and aged in a combination of barriques and large-format puncheons, with 40% new French oak. The oak is beautifully integrated, lending a buttery palate expression with good mid-palate fruit density and length. Spicy ginger notes and saline-acid tension balance out the wine’s soft, fleshy mouthfeel.
This wine shows nice weight and richness from the addition of about 8g/L of sugar, with bright citrus, tropical fruit, and apricot notes. Crushed almonds appear on the off-dry finish.
Whole-cluster direct to press. VerTempora is Latin for “Spring,” and this wine is a blend of Counoise, Cinsault, and Mourvèdre. Bright strawberry and cranberry fruit lead, with subtle sagebrush aromatics. About 8–9g/L of residual sugar was added—almost out of necessity. The acidity remains super juicy and bracing, but the touch of residual sugar adds welcome weight and balance.
From the Rolland Taylor Vineyard in the Texas High Plains. Hand-picked, fermented in stainless steel, and aged in a mix of new and neutral oak puncheons and smaller barriques. Bright notes of orange peel and lemon zest lead the nose, accented by honeysuckle, vanilla, and subtle toasty oak. The medium-bodied palate offers fantastic silkiness, carrying through to a lengthy, saline finish with a pop of grapefruit and tangerine zest—almost like biting into a fresh kumquat.
The fruit for this rosé comes from Yoder Vineyard, located north of Dalhart. It’s a vibrant and expressive wine—crisp and crunchy with tart red berry fruit, wild herbs, white peach, and apricot. A creamy mid-palate provides texture and balance before leading into a long, mineral-driven finish marked by refreshing acidity.
The 2024 Ducks Unlimited Red Blend is simply fantastic. It’s a powerhouse, and one of the best red wines I’ve tasted from Texas. The aromatics just soar out of the glass with blackberry and boysenberry fruit framed by elegant cedarwood spice, lifted by violets and a bright pop of blue fruit. Medium to full-bodied, it shows a framework of fine-grained, firm tannins with a long finish marked by wet slate and crushed rock minerality, underscored by crisp, focused acidity. Serve it cool, at a cellar temperature of about 57°F, and you’d be crazy not to pair it with brisket or seared duck breast over a balsamic reduction. The blend is 62% Tannat from Vintage Press Vineyard and Hye Estate, 28% Cabernet Sauvignon, 7% Cabernet Franc, and 3% Petit Verdot from Dell Valley Vineyard.

This sparkling is made entirely from the Blanc du Bois grape, sourced from Mound Prairie Vineyards outside of College Station Texas. The vineyard was planted by Bob Hensz and his daughter, Elisa Jones, the winemaker at Elisa Christopher Wines in 2007. The Blanc du Bois was aged six months on lees and offers up fragrant honeysuckle and tropical fruit notes with a kind of bright vinous character, all balanced by a rich, frothy and creamy mousse, finishing with nice chalky minerality and baking spice. Elisa Christopher Wines is owned by husband-and-wife duo Elisa and Chris, with Elisa also serving as the winemaker. Passionate about sparkling wine and their red wine program, they plan to begin planting their 43-acre estate in 2026.
The Mourvèdre is sourced from Lahey Vineyards in the Texas High Plains and was fermented and aged entirely in stainless steel, giving it a bright, crisp character. It’s full-flavored, showing ripe, sweet red berry fruit and hints of prairie grass over a lush core, supported by a juicy spine of blood orange acidity. The finish is long and subtly tropical, adding an intriguing layer to this vibrant red. From Lahey Vineyards in the Texas High Plains, this wine was fermented and aged entirely in stainless steel, and it’s a tasty one. It’s crisp, crunchy, bright, and energetic, with plenty of lemon-lime citrus fruit and white floral notes accented by a touch of flinty minerality on the lengthy finish. A fleshy character rounds out the mid-palate, making it an ideal aperitivo wine. Beautifully balanced. Kuhlman Estate, now known as K Estate, was acquired by Brian Heath in the summer of 2024. This is about as sweet as they come, bursting with bright floral and citrus peel aromatics. Super fragrant and delicious, it shows a viscous texture on the palate with candied peach rings and apricot notes. The finish is lifted by balanced acidity and a touch of chalky minerality, keeping everything in check. It’s not over the top—just irresistibly moreish, making you want another sip right after the last.

Fermented and aged in 100% stainless steel, this white wine is crisp and tension-filled, offering notes of prairie grass, citrus, and lemon verbena, with a hint of sweet lemon curd on the palate. It finishes with delicate chamomile and honeycomb accents. In 1997, Dr. Vijay Reddy planted his first vines in Texas, drawing on his family’s multi-generational farming heritage. Today, Reddy Wines focuses exclusively on estate-grown production from vineyards situated at 1,007 meters (3,305 feet) in elevation.
From Tokio Vineyard in Tokio, Texas, this Tempranillo was fermented in stainless steel and aged in 25% new American oak. It shows ripe red currant and cherry fruit with a touch of dusty minerality in a medium-bodied expression. Sappy, maple-laced tannins frame the palate, joined by cured bacon and sweet spice notes on the lengthy, mineral-rich, bone-dry finish.

Veesart Vineyards is a 45-acre site in Shallowater, Texas, northwest of Lubbock. This wine underwent a slow, cold fermentation to preserve its bright, ripe aromatics of banana pudding, white peach, and delicate white florals. A touch of skin contact adds texture, leading to a precise, crisp, and crunchy palate expression with citrus fruit and subtle apple-skin tannins.
A small-batch production of just 69 cases—three barrels total—this wine was aged for 14 months in neutral oak, unfiltered, and estate bottled. It’s a dynamic white with a slightly richer expression than the laser-focused 2023 vintage, showing broader mid-palate appeal with riper orchard fruit taking the place of citrus. Bright wildflower notes and subtle baking spice add complexity. Exceptionally detailed for a Texas-grown Chardonnay, crafted by some of the most meticulous winemakers in the state—these guys literally analyze cluster by cluster and pick off berries they don’t want, and you can taste the precision.
A blend of 75% Grenache and 25% Syrah, this wine is native yeast–fermented in an egg-shaped fermenter and finished as a Pét-Nat. It’s exceptionally clean and polished, with a creamy texture and bright flavors of cranberry, strawberry, and white peach. The mousse is rich, vibrant, and creamy, delivering a pure and expressive sparkling wine.
Fermented and aged for 10 months in 100% neutral oak, this wine is super bright and energetic, showing excellent layers of citrus, orchard, and subtle tropical fruit. A gentle honeyed richness lingers on the finish, giving it both freshness and depth. Easy to drink and beautifully balanced, with a fantastic finish.
Like the 2023, this was fermented in stainless steel, with aging split between partial acacia wood puncheons—used to build mid-palate weight and aromatic intensity—and stainless steel for five months. Fragrant honeydew melon, white peach, and jasmine aromas lift from the glass, all making appearances on the light- to medium-bodied palate. A silky, satiny fruit profile builds with added complexity, ranging from crunchy green apple to pear and more white peach, finishing with a long, chalky mineral note.

This is the inaugural release from Spencer Gatlin—son of Dan Gatlin—who has launched his own project with a clear vision. “What he has done, and will do, is create his own concepts,” Dan says proudly. One of those concepts centers on Merlot 181, a clone Spencer calls “a grape that blows my mind.” Inspired by a 2018 trip to France—specifically a day spent tasting in Saint-Émilion—Spencer set out to craft a Right Bank–style wine rooted in Pomerol sensibilities. Sourced from Narra Vineyards in the Texas High Plains, along with a few additional nearby sites, this blend of 97% Merlot and 3% Cabernet Franc is grown at about 10 clusters per vine, averaging 1 ton per acre. Fermented in open-top bins with cooling plates and hand punchdowns over 7–10 days, then aged 12 months in 20% new French oak followed by 12 months in neutral barrels. The wine opens with elegant red fruit tones, baking spice, high-toned red florals, and a touch of cedarwood. Medium-bodied on the palate, it offers a plush mix of cranberry and plum with supple tannins and a saline-mineral finish that begs for a well-salted cut of steak.

This Cabernet Sauvignon is medium-bodied, showing red currant fruit and black tea notes layered with sagebrush. The Conflation Red is a bold, dark-fruited wine with muscular tannins and appealing iron-stone mineral tension at mid-palate. 100% Tempranillo, farmed at 15 clusters per vine with yields around 1.5 tons per acre. Fermented in open bins with cooling plates and hand punchdowns over 7–10 days. Malolactic fermentation completed in stainless steel, followed by 12 months in 20–30% new French oak, then transferred to neutral barrels for an additional 6–12 months prior to bottling. Aromas are bright and clean, with tart red berry fruit, baking spices, and subtle cedarwood notes. Medium-bodied on the palate, supported by very fine-grained tannins and crunchy red berry fruit. The wine is savory-spiced, with excellent fruit purity and mouthwatering acidity.

The most captivating wine I tasted at the Fredericksburg Food & Wine Festival in October 2025 came from Kalasi Cellars. This is a medium-bodied red with redcurrant fruit and darker blueberry notes, supported by super-fine tannins that offer a pleasing grip—almost like apple-skin tannin. Brown spices weave through the palate, leading to a medium-bodied, spice-bright finish. A great food-pairing wine thanks to its grip and vibrant spice profile.

Kalasi’s 2022 RAJ Collection (Green Label) delivers on the promise of the standout 2021 release, offering a fragrant bouquet of brown spices layered with red and black currant, cherry, and plum. Hints of white pepper, cinnamon, and a trace of curry powder add complexity and lift. Medium-bodied on the palate, with soft, supple tannins and impressive mid-palate concentration. The finish is long, pleasing, and well-balanced. The “RAJ Collection,” named after the family’s son, is a special label crafted only in exceptional vintages. Aged for 24 months in neutral French oak.

This Sagrantino, the first optically-sorted example of the variety in Texas, is a standout wine. Grown near the Malvasia Bianca blocks on the historic 140-acre Narra Vineyards site in the Texas High Plains, this low-yielding variety thrives in its unique terroir. A true powerhouse,it boasts hefty, muscular, broad-shouldered tannins, complemented by rich red berry fruits, Indian spices, and a touch of cinnamon. The clean, dry finish underscores its structure and aging potential. This is a wine built for the cellar—lay it down to see its full complexity unfold. A remarkable achievement for Texas viticulture.

I had the pleasure of tasting three vintages of this wine: the inaugural 2017, the 2018, and the 2022, which introduced new French oak and optical sorting (production was limited in 2019, with none made in 2020 and 2021). There’s no question that the 2022 vintage is the most polished and refined of them all. These reds are rich, showcasing black currant and red berry fruits, leather, and layered with pressed flowers and floral elegance. Aged for 24 months in 25% new French oak, the 2022 vintage takes this profile to the next level, adding a richer blue fruit and violet character, complemented by polished tannins and a plump, rounded texture. Crisp, vibrant structure supports the wine’s overall framework, making it both complex and approachable.

This Alta Loma Vineyard Picpoul Blanc shows excellent weight and balance, with pretty notes of citrus peel, wildflowers, and honeycomb. The palate is rich and creamy, filled with ripe orchard fruit that builds in density toward a medium-bodied finish. Hints of honey and crushed almonds linger gracefully, adding depth and texture
Uniquely Mourvèdre, this wine offers heady, meaty aromatics with high-toned violets, black currant fruit, saddle leather, and tobacco. Loamy earth notes underpin the palate, while broad-shouldered, muscular tannins drive the full-bodied finish.

Fermented in oak foudre and aged for 20 months in 20% new, 40% second-use, and 40% neutral French oak barrels, this Syrah comes from Alta Loma Vineyard in the Texas High Plains. It’s a full-bodied, dense, and powerful expression with meaty richness, black truffle, and loamy earth notes wrapped in a molasses-like depth. The bold, expressive palate reveals juicy dark berry fruit layered with cocoa powder and lifted by zesty blood orange acidity, all framed by robust, finely structured tannins.
