A co-ferment of 40% Traminette, 29% Valvin Muscat, 26% Noiret, and 5% Aromella—all hybrid varieties developed by Bruce Reisch at Cornell—this is a uniquely expressive red wine. It opens with wild aromatics of dill, orange peel, and grapefruit zest, leading into tart cranberry fruit and pithy citrus. Grippy apple skin tannins add texture and structure, framing a long, floral-driven finish.

This Tocai Friulano was destemmed and macerated for five days, then pressed at the onset of fermentation and blended with Traminette juice for co-fermentation in stainless steel. A splash of Cayuga White was also added to brighten the acidity. There’s a wild, untamed quality to this crisp and expressive white wine, with strawgrass and grapefruit zest leaping from the glass. Zingy acidity fuels the palate, where notes of pickled fennel, candied melon, and a chilled chamomile tea character linger on the long, savoury finish. Pep in its step and plenty of personality, with just 187 cases produced.
From the Wagner Farms Cayuga White block on the east side of Seneca Lake, planted in 1978, this wine comes from a flat site with Lansing gravelly silt loam soils—formed from calcareous glacial till derived from sandstone, limestone, and shale. Cayuga White, a French-American hybrid developed by Cornell University in the 1940s, is grown almost exclusively in the Finger Lakes and here is planted on its own roots and trained to a high-wire cordon system. No sulfites were added at bottling. Bottles were disgorged in winter 2024, with just 450 cases produced. Fragrant pear and white peach aromas mingle with almond and white flower notes, blooming on the palate into tropical tones of pineapple and coconut cream. There’s something oddly evocative here—like a dry, acid-driven Pina Colada conjured by a bartender at Death & Co, served poolside at a Hawaiian resort. Why it takes you there, you won’t be able to explain. But it will—and that’s part of its charm.
This is pure elegance from the Finger Lakes region of New York State. Structured and poised, it rests on a firm, dusty tannin backbone with racy blood orange and cranberry-like acidity. The nose is delicately expressive, offering red berry fruit and warm brown baking spices, while the palate delivers clean, zesty ripe red fruit that glides into a mineral-laced finish, redolent of iron and earth.

Estate Chardonnay harvested in the early morning, with the cool fruit pressed directly and settled overnight before being transferred into Sandstone Jarre vessels—clay, stone, and terracotta—to ferment spontaneously. Fermented to dryness with full malolactic conversion, then aged eight months. I just love this Chardonnay. The aromatics evoke wet terracotta mingled with citrus and orchard fruit, and the palate is utterly lush—silky, soft, and completely mouth-filling. It’s richly textured without ever feeling heavy, the fruit remaining pure and vibrant, redolent of yellow apple and creamy pear. White floral notes add nuance, and the finish is long and lingering, carried by a lemony, oil-rich brightness. Yum.
The 2023 Standing Stone by Hermann J. Wiemer Teinturier Collection Méthode Traditionnelle Brut Rosé is made entirely from Saperavi. It opens with vibrant strawberry aromatics and delivers a lively, frothy mousse. On the palate, crisp red berry fruit meets striking acidity, finishing clean, bright, and refreshingly easygoing.
Meaty and savoury, this wine pulses with black olive and black liquorice notes, layered with the umami depth of cured Bresaola and lifted by dried rose petals on both the nose and palate. There’s a zing of blood orange acidity and a zesty, grippy tension that propels the fruit-driven finish. The blend is 75% fruit from Serenity Vineyards (under 10-day carbonic maceration) on the west side of Seneca Lake, farmed by the Hermann J. Wiemer team. The remaining 25% hails from New Suns, the home vineyard on the west side of Cayuga Lake, and was fully destemmed with a two-week maceration. Aged in neutral barrels for 10 months before blending and bottling in August 2024. Hand-harvested and spontaneously fermented.

Winemaker Hans Peter Weis sources most of his reds from vineyards along the middle to northern stretches of Seneca Lake. He prefers a cold soak to delay fermentation, typically inoculating after three to four days. In cooler years, picking happens as late as possible—just before the leaves fall. After 10 days of fermentation in open-top fermenters or stainless steel, the wine is aged for 24 months in barrel, including up to 15% new French oak. The result is an elegant wine with red berry fruit, fine brown spices, and a hint of espresso, with conifer notes emerging as it opens. Tannins show an apple-skin texture—ripe yet firm—leading to a finish of red cherry and cherry pit. The 2024 vintage, also tasted, is deeper and more expressive, with bold flavors, grippy tannins, and a strong sense of energy and tension.

Made from 67% botrytized grapes, this wine shows a lovely honeyed richness with nuances of apricot and poached pear. The palate is beautifully silky, with great body and tension, leading to a long, floral finish layered with tangerine peel, kumquat, and honeysuckle.
100% Sauvignon Blanc, sourced from 53% Nutt Road Vineyards (Penn Yan, NY) and 47% Sawmill Creek Vineyards (Hector, NY). Ten percent of the juice was barrel fermented in puncheon, with all lots blended after six weeks, then tank aged and cold stabilized. This is a bright, zesty Sauvignon Blanc with fragrant sweetgrass aromatics—like fresh-cut lawn after a summer rain—lifted by a hint of sea spray. Pear and crunchy apple drive the light-bodied palate, which crackles with zingy, quaffable acidity.
The grapes for this Riesling are grown on deeper loamy soils, contributing to a more fruit-forward style. Gently pressed and stainless steel fermented, the wine was aged on the lees for 4–5 months before racking and bottling. It offers bright pear, apple, and green melon fruit with a subtle note of vanilla cream or panna cotta. A lovely thread of baking spice enriches the midpalate, while tangerine and grapefruit zest drive the finish. The aromatics are fresh and vibrant, with delicate white rose lingering beautifully on the long, lifted close.
Vivid, bright, and expressive, this white (sourced from Glenora Farms on the west side of Seneca Lake) offers notes of white peach, white plum, and a squeeze of grapefruit-like acidity. Light- to medium-bodied on the palate, it finishes with excellent wet slate mineral tension. There’s great energy and precision throughout.

This is a vivid, crunchy, and clean style of Pét-Nat, offering up orchard fruit, chalky minerality, and crisp apple skin tannins—all wrapped in a gentle, frothy mousse. Bright and refreshing, it’s effortlessly enjoyable and undeniably crushable on a hot, humid summer day. Made in limited production from a blend of Seyval Blanc, Cayuga White, Chardonel, and Melody grapes, and hand-bottled.
From the George Ball Vineyard—planted in 2015 at higher elevation and further from Cayuga Lake—this site tests the cold-hardiness of Marquette each winter. Vines are trellised on north-south rows to a high wire cordon system and are farmed with heavy applications of composted wood chips. To enhance air exchange in the clay-rich soils, vine bases are mounded. Hand-harvested and aged on lees until July before being lightly filtered and bottled, production was tiny (188 cases). This is a savory, zippy red with brambly red berry fruit, charcuterie and violet aromas. The palate is vibrant and tangy, framed by crunchy acidity and finishing with earthy, truffle-like depth and lingering minerality.

The bulk of the fruit for this wine came from a special, protected site on the west shore of Cayuga Lake, planted in 1973 on Cazenovia silt loam soils. These own-rooted vines are hand-harvested and grapes were transferred whole cluster to red fermenters for carbonic maceration, then basket-pressed and moved to tank to complete fermentation. Just before bottling, a portion of Cabernet Franc juice from a separate whole cluster carbonic maceration was added. Bottled under crown cap and disgorged in February 2024, only 500 cases were produced. The result is meaty and black-fruited, laced with notes of black olive and black liquorice. Assertive and bright, the palate brims with zesty tension and an energetic mousse that brings structure and lift to the finish.
What a fabulous, racy, salt-tinged white packed with green apple, pear, and a woolly mineral note, finishing with a subtle herbal edge. Picked in the cool morning hours, the fruit was pressed directly into a mix of concrete tulip and Clayver vessels, where it fermented spontaneously and completed malolactic naturally. It was aged 80% in concrete and 20% in Clayver. The concrete encourages natural lees movement and a low, slow fermentation, adding texture and depth.

You can never be too much of a wine snob to enjoy this—and if you say you don’t, you’re just lying to yourself. Made from 90% Valvin Muscat and 10% Barbera, all estate-grown, the fruit was machine-picked, crushed, and destemmed directly to press. After a standard press cycle, the juice was cold settled before racking and inoculated with Epernay II yeast. Fermentation lasted 20 days at an average temperature of 55°F before it was arrested; the wine was then racked, blended, filtered, and sent to Lakewood Vineyards for force carbonation and bottling.
No fining, no filtration, and spontaneous fermentation—this wine is a bit of savage creature. A heady mix of savory herbs, dried rose petals, and expressive black cherry and blackberry fruit leads the charge, accented by pomegranate seed crunch and a zippy, almost prickly acid tension. The finish is perfumed and exotic, with notes of blood orange, lavender, and rose water. Sourced from Ria’s Wines on the east side of Seneca Lake, the blend includes Baco Noir (fermented whole cluster) and a co-fermentation of Chelois and Traminette (also whole cluster), managed with a gentle hand during cap work and aged 60% in stainless steel and 40% in neutral oak.

100% Steuben—a hybrid developed in the early 20th century—biodynamically farmed by Corey Christie on his family’s farm outside of Naples, NY. Hand-harvested, de-stemmed, and left on skins overnight before being pressed to stainless for spontaneous fermentation, then aged five months in neutral barrel before being bottled unfined, unfiltered, and with no added sulfur. This is exactly the sort of wine that deserves to be on every natural wine bar list in NYC: wildly original and refreshingly alive. It drinks like a cross between fresh-pressed juice and kombucha—brightly red-fruited, layered with herbal lift and a musky, mineral edge. Think muddled white peach, dried herbs, and a trace of incense on the finish. Medium-bodied, fascinating, and endlessly drinkable.
This is one laser-focused, mineral-driven, tension-filled rosé of Cabernet Franc. Subtle red berry fruit mingles with spicy herbal notes—like biting into a gently spicy shishito or padron pepper. Beautifully expressive and precise, it finishes with electric acid brightness that can carry it effortlessly from aperitivo through to the end of a meal. Sourced from estate-grown, 100% certified sustainable vines, the Cabernet Franc grapes were harvested at midnight, followed by a 12-hour cold soak and fermentation in stainless steel tanks.
Weis prefers sourcing grapes from the southern portions of the lakes, where shale soils are more prevalent—reminding him of the vineyards near his hometown in the Mosel. The 2024 vintage was long and generous, what he calls a “dream vintage,” with the luxury of picking at ideal ripeness. This wine shows a plump, generous palate—especially when compared to the Estate 2023 Riesling, which I had just tasted. I highly recommend tasting them back-to-back. You’ll notice shared characteristics: orchard fruit, crunchy lime, and that bright, mouthwatering acidity that defines both wines, though this one delivers with a bit more roundness and breadth.
A blend of Merlot (45%), Cabernet Franc (30%), and Blaufränkisch (25%), with a brief six-hour maceration on the skins. The Merlot lends mid-palate richness and a decadent strawberry–watermelon core, while the Cabernet Franc provides linear acidity that lifts the aromatics—especially those floral and spicy notes brought in by the Blaufränkisch.
This Grüner Veltliner shows impressive mid-palate width—think of it like a frisbee, in contrast to the more pointed, football-shaped profile of Peter’s Rieslings. The aromatics are citrus-bright with notes of white flowers, almond skin, and a beautiful squeeze of lime over Melon de Bourgogne-like fruit. The finish is long, steely, and mineral-driven.
This is Aravelle (Hybrid “NY 81.0315.17”), a cross between Riesling and Cayuga White. Bright and expressive, it opens with aromas of white flowers and lime blossom, building into a palate driven by zesty, crunchy acidity and apple skin notes. A subtle hint of melon and honeydew lingers on the finish. Light, bright, and clean throughout.

This 2023 Pét-Nat of Seyval Blanc is sourced entirely from Glenora Farms on the lake’s west side. A “salty dog” of a sparkler, this bone-dry wine bursts with zesty lemon and lime, kiwi fruit, white flowers, and a touch of Marcona almond on the mineral-driven finish. Crisp, crunchy, and just salty enough, it’s a vibrant companion to a wide range of dishes—spicy or otherwise.
I had this with a mortadella dish from The Park Inn in Hammondsport, NY—a glorious stack served on grilled focaccia with olives and orange mustard—and the pairing absolutely soared. It has a nutty, brown-spice depth that turns into cherry-almond marzipan on the palate. Paired with that mortadella, it draws out all the savory, nutty nuance and then rinses the fat clean with precision and lift. Do yourself a favor: recreate this pairing, or you’re missing out. Winemaker Phil Plummer is like a modern-day Icarus, flying just a little too close to the sun with his experiments—but the results are golden. Keep flying, Phil.
Made from 100% estate-grown Cabernet Franc fermented in 1-ton open-top bins with twice-daily punchdowns, this red also includes 14% Merlot sourced from Seneca Lake. After pressing, the wine completed malolactic fermentation in French oak barrels (15% new) with weekly bâtonnage, and was aged for 18 months. Focused and fresh, it opens with bright cherry and raspberry fruit, cedarwood nuances, and fine-grained tannins that carry a velvety quality across the juicy, crunchy-acid finish.

This Marquette (a French-American hybrid) was sourced from Doyle Vineyards on the west side of Keuka Lake, where it tends to ripen early. Pressed off skins and fermented with native yeast, the wine was aged in neutral French oak for 20 months, then bottled unfined and unfiltered. There’s a wild, sauvage-like character here that sets it apart—tangy and tart red fruit layered with smoky mineral tones, dried flowers, and a distinct sweet herbal-tea quality. Made in a natural style, this wine asks for a curious, open-minded palate.

Winemaker Phil Plummer explains that the Diamond variety can’t hang long enough on the vine to make a true dessert wine, so they pick it early, freeze the fruit, and barrel ferment it using a non-Saccharomyces yeast that naturally stalls around 10% alcohol. Half the wine went through malolactic fermentation, the other half did not. The result? Think Sauternes on an acid trip—mouth-puckering lime-bright acidity supports a luscious core of dried apricots and golden fruit, finishing long, tangy, and tart.
