This sparkling Riesling from Ravines (perched above the glacier-carved Finger Lakes of New York State) is made in the traditional method, with secondary fermentation in bottle and four years en tirage. Hand-riddled and disgorged in the spring of 2022, it’s a dynamic, expressive wine with a gorgeously enticing thread of saline-acid minerality. Layers of baked orchard fruit and toasty almond notes carry through the lengthy, satisfying finish.
Produced by partner Richard Kershaw in South Africa, and aged for 16 months in a blend of new French oak and stainless steel. This Chardonnay is sourced from a 35-year-old plot comprising just seven rows of vines—an overlooked vineyard Kershaw discovered near the ocean, about 2.5 hours from Cape Town, with ancient limestone soils. Kershaw replanted the site to Chardonnay, and the result is extraordinary. There’s a beautifully Chablis-like minerality that lifts from the glass, nuanced by rich layers of citrus fruit, citrus oil, flinty minerality, and crushed almonds. The mid-palate offers wonderful density, with citrus zest, orange oil, and white flowers underscored by beautifully integrated toasty oak. Salty-chalky mineral tension carries through the finish, which is impressively long and resonant. David Bradbury, Wine Director at Rhinory, joked about tasting the best Chardonnay of your life in Texas while guests wandered by to get close to Blake the Rhino—otherworldly, just like the wine itself. A truly great wine from this remarkable collective.
Wow—this is spectacular. The palate is seamless and deeply impressionable, with an ultra-creamy, fine-beaded mousse that feels both focused and energized. Head winemaker Gilles Martin was born near Champagne and trained at Champagne Deutz before serving as assistant winemaker at the acclaimed Roederer Estate in California from 1990 to 1996. Disgorged on 5.13.23 and again on 10.24.24 after three years sur lie, this Brut with 6 g/L dosage has impressive drive and energy. The mid-palate shows excellent chalky minerality and citrus-laced orchard fruit, underpinned by a savoury-saline tension and nutty richness. Matt Dees says they get great fruit richness with low sugars, so there’s no need to add dosage—this is a zero-dosage wine. It’s incredibly bright, with oyster shell minerality. They’re using low sulfur and fine-tuning both their barrel timing and how they handle press wines, increasingly putting them through malolactic fermentation to add density, richness, and flesh. The mousse is beautifully balanced—not too assertive—with a lovely baking spice richness and an unbelievable saline-acid tension. The 2020 Noble Select Riesling from Weis Vineyards is absolutely riveting. This wine opens with honeycomb and a hint of hibiscus, followed by luscious layers of candied apricot and orange oil. The Roussanne Estate Reserve from Bingham Family Vineyards, sourced from their High Plains vineyards, kicks off with fragrant notes of prairie grass, chamomile tea, and honeycomb. Diamond is a historic American hybrid white grape, once prized over a century ago for sparkling wine production. This bottling channels that legacy with a vinous, green apple character layered with hints of honeydew melon and wildflower honey. “Colluvial” refers to the rugged, rocky soil found in many of the world’s great vineyards, and this decadent Chardonnay lives up to its name. It’s a study in minerality, offering the tactile impression of smooth river stone and the bracing tension of freshly squeezed lemon meeting a bite of salted, candied lemon rind. Dr. Konstantin Frank began producing still wine in 1962, but it wasn’t until 1985 that his son, Willy Frank, introduced the winery’s first sparkling wine—carving out a new niche that Konstantin himself never pursued. With German-engineered equipment designed for méthode champenoise, the Franks laid the foundation for one of the Finger Lakes’ most respected sparkling programs. This bone-dry Riesling Nature—with no dosage and nearly three years en tirage—is like lightning in a bottle. Hand-harvested with shears and field-sorted, the fruit was whole-cluster pressed and fermented with 100% native yeast. The wine was aged with 95% fermented in stainless steel and 5% in a 500L neutral French oak barrel. Sourced from the Seneca Lake AVA in New York’s Finger Lakes, the vines grow on steep to very steep western-facing slopes of up to 55%, rooted in blue slate, glacial till, limestone, and glacial shale.

This is a Caprettone, a grape variety from Coda di Volpe in the Vesuvio DOC in Campania, typically blended. Grown on the Belle Fiore estate, there is a bout an acre and a half and winemaker Rob Folin fermentes ina m ix of ss, acaica and French oak all neutral. It’s a bracing, refreshing, lemon-lime-bright wine with nice nutty notes in the nose and loads of canided citrus fruit and vivid acidity. Great tension.
The 2019 Brut—a méthode champenoise sparkler made from Pinot Noir, Chardonnay, and Pinot Meunier—is sourced from multiple vineyard sites along the east side of Seneca Lake. Each lot was vinified separately in stainless steel and aged sur lie for three months before tirage.
