Sourced from Layne Vineyard in the Applegate Valley, this after-dinner Riesling is beautifully balanced, offering just the right touch of sweetness offset by juicy acidity. It overflows with rich, wildflower honey–infused dried apricot, white peach preserves, and honeycomb, carrying through to a long, lingering, stone-fruited finish. It absolutely calls for a cheese platter of fancy French cheeses—or warm, oozy Raclette cheese with toasted sourdough bread.
With fruit sourced from Daisy Creek Vineyard in southern Oregon, whole-cluster pressed and aged in neutral French oak for four months on the lees. The wine is lime-bright, with tropical fruit notes, flinty minerals, and kaffir lime bursting across the palate. Fermented and aged entirely in FCC Crystal stainless steel (austenitic-grade, named for the crystalline structure of the steel), this Chardonnay is sourced exclusively from Bob’s Vineyard and planted to Dijon clones. “We treated the pressing like a Sauvignon Blanc,” the winemaker says—blanketing it with CO₂ to keep the wine in a reductive state before fermenting and aging it entirely in stainless, with malolactic fermentation fully blocked. Poulet Sautant Unoaked Chardonnay is named for the “jumping chickens” on Bob Pruett’s property—specifically, his wife’s Polish Frizzles. During the growing season, the chickens leap up to knock berries off the vines to feed their young, which Bob has come to view as a charming (and accurate) indicator that the grapes are ripe and ready to harvest. This unoaked Chardonnay is super fresh and bright, with aromas of ripe pear, apple, and lemon citrus. Medium-bodied on the palate, it shows fleshy, creamy pear and apple fruit framed by zesty, electric acid tension. The finish is lifted by a touch of salinity and a pop of honeycomb.
This Symington project is quickly becoming one of Alentejo’s most impressive producers. Veesart Vineyards is a 45-acre site in Shallowater, Texas, northwest of Lubbock. This wine underwent a slow, cold fermentation to preserve its bright, ripe aromatics of banana pudding, white peach, and delicate white florals. A touch of skin contact adds texture, leading to a precise, crisp, and crunchy palate expression with citrus fruit and subtle apple-skin tannins.
A small-batch production of just 69 cases—three barrels total—this wine was aged for 14 months in neutral oak, unfiltered, and estate bottled. It’s a dynamic white with a slightly richer expression than the laser-focused 2023 vintage, showing broader mid-palate appeal with riper orchard fruit taking the place of citrus. What a fabulous, racy, salt-tinged white packed with green apple, pear, and a woolly mineral note, finishing with a subtle herbal edge. Picked in the cool morning hours, the fruit was pressed directly into a mix of concrete tulip and Clayver vessels, where it fermented spontaneously and completed malolactic naturally. It was aged 80% in concrete and 20% in Clayver. The concrete encourages natural lees movement and a low, slow fermentation, adding texture and depth.

You might be surprised when you see the label, but give this wine a chance—and here’s what happens: subtle stone and tropical fruit notes build across the medium-bodied palate, nuanced by white flowers. There’s grippy, citrusy acid tension and mineral drive, all layered with apricot pit, white peach, and sea salt. The 2024 version leans a touch more plush and soft than previous vintages, but it remains just as compelling. Stockpile this by the caseload—this is one to watch.

It’s not the oily, rich style of France; instead, it’s more focused and mineral, with just a touch of that silky underbelly. This Malvasia Bianca is a testament to freshness and vibrancy. Grapes were pressed directly in the vineyard using a bladder press, with the juice cold-settled before fermentation and then aged for six months in stainless steel prior to bottling. Sourced entirely from Kalasi’s Narra Vineyards estate in the Texas High Plains—located five hours from the winery—refrigerated transport is essential to preserving the quality of the fruit. This light, low-alcohol white is ideal for summer sipping or pairing with spicy, rich dishes. Highly floral and delicate, it features enchanting aromas of jasmine and honeysuckle. On the palate, it delivers impressive phenolic grip and a vinous character, underpinned by a chalky mineral baseline and bright acid tension. Lean, focused, and utterly refreshing, this white shows both charm and precision.
This Viognier opens beautifully in the glass, revealing candied citrus peel, dried prairie grass, and an intriguing smoky maple-bacon and white truffle richness from lees aging. Medium-bodied with a subtle, crunchy tannin grip, it shows layers of citrus and orchard fruit on the palate, while those savoury, aromatic notes reappear and linger through the finish.
Under the guidance of John Rivenburgh at Bending Branch, Picpoul Blanc was first planted in Texas in the High Plains around 2009 at the then-named Bending Branch Estate Vineyard. Selected for its excellent acid retention, the planting drew inspiration from Tablas Creek in Paso Robles. This particular wine comes from the roughly 15-acre Alta Loma Vineyard in the Texas High Plains (previously known as Timmons Estate Vineyard until its recent renaming). After harvest, the grapes are pressed in the vineyard, then transported to the winery and fermented on the skins without cold settling. Known for its natural acidity, the variety requires no acid adjustments and is bottled approximately six months after fermentation. This Picpoul Blanc is super aromatic, offering honeyed and nutty notes, melon-rich fruit, and pretty white floral aromas interwoven throughout. The palate is richly textured with good depth, balanced by a pleasant grip and a long, salty mineral finish.
Made from 100% estate-grown fruit, this white wine was direct-pressed and cold-fermented in stainless steel over 20 days, then aged on heavy lees for 6 months. Crisp and mineral-driven, it’s light to medium-bodied with high-toned notes of jalapeño and lemongrass, a punch of citrus zest, lime blossom, and a savory finish of pink Himalayan sea salt. Emerging wild herb nuances—fennel, sea grass—lend added complexity and coastal charm.
Sourced from John Sebastiano Vineyard, a site planted across steep, wind-exposed slopes with a mix of sandy loam, clay loam, and pockets of diatomaceous earth—soils and aspects that create naturally low yields and concentrated fruit—this Chardonnay is native-yeast fermented in barrel and aged 24 months in 50% new oak. The oak presents vividly, offering a rich, toasty profile that builds in the glass before giving way to lemon curd and butterscotch. It’s incredibly rich and unabashedly ripe, showing caramel-drizzled candied citrus rind, tangerine, tangerine oil, and warm ginger spice. Yet it’s a bit of a chameleon: a current of zesty acidity rises through all that silky richness, bringing the wine into balance.
Sourced entirely from Hyde clone at the Bootlegger’s Hill Vineyard, whole-cluster pressed and 100% barrel-fermented, then aged 11 months in 33% new French oak followed by 7 months in stainless steel before bottling. The nose is super rich, showing lemon curd, apple, lemon peel, candied ginger and sea-spray minerality, with a kiss of vanilla and an ultra-salty wet-slate character. Ginger spice and candied lemon peel carry onto the palate, which has excellent mid-weight richness and a long, spice-driven finish. Totally captivating and delicious—beautifully balanced.
Sourced from Premier Cru vineyards—Fourchaume and Vosgros, a small site on the northern side of the appellation. Aged for 11 months in 5% new French oak. This is a beautifully crafted white wine with a creamy mid-palate richness and a lingering Marcona almond character. White flowers, tangerine peel and lemon verbena add intrigue and complexity, while the finish is soft and carried by ripe orchard fruit with excellent mineral tension stretching through the length. The 2024 vintage was hit hard by hail, so there will be no 2024 bottling—stock up on this while you can.
Whole clusters were pressed directly and the wine was 100% barrel-fermented, then aged for 12 months in 32% new French oak and a further 6 months in stainless steel before bottling. Sourced from the El Diablo Vineyard along the eastern rim of the Russian River Valley, this is a wonderfully precise white wine with tangerine oil, white peach, yellow apple and poached pear. The mid-palate is luscious, creamy and silky, revealing decadent French-pastry and buttered-croissant notes, followed by a fabulous sea-salt finish. There is more richness here than in past years—and it’s a welcome evolution. These wines are beautifully balanced; Julian Hausseppian is doing excellent work.

A lovely saline minerality accents the palate. Medium to full-bodied with excellent mid-palate weight, it finishes quite crisp. Subtle notes of French pastry and oyster-shell minerality weave throughout. Truly captivating.

This 100% Chardonnay comes from two vineyards—Texas Hills in Johnson City (Texas Hill Country AVA) and Certenberg Vineyard in Pontotoc, Texas. Picked on the early side to preserve natural acidity, it underwent bâtonnage for three months before bottling. Made in the pét-nat style but sterile-filtered before secondary fermentation and bottled under crown cap, the wine is light, bright, and crisp, showing orchard fruit notes and a frothy, gentle mousse that’s pleasantly soft rather than aggressive. It has great texture and a clean, vibrant finish. Crafted by winemaker Rae Wilson, with support from Tony Offill.
Sourced from Lakewood Farm (certified sustainable) and three other long-time growers on the west side of Seneca Lake, this sparkling wine is produced exclusively from free-run juice. Carbonated and bottled on site, it’s also available in 187ml bottles and kegs for wholesale. It offers impressive complexity for the price, with notes of citrus peel, white flowers, and ripe apricot layered over a subtle French pastry character.
This is a super bright, floral, and expressive wine, bursting with wildflower honey, jasmine, and candied kiwi fruit. Medium- to full-bodied with a lovely interplay of acid tension and subtle sweetness. The wine was whole-cluster pressed and barrel-fermented with native yeast, then aged for 13 months in French oak (30% new).
