I’d originally tasted this bottle that was disgorged in April of 2025, but this slightly later disgorged is fabulous with some baking spices notes layering into the apple and pear notes, underpinned by saline-acid tension and an assertive, focused mousse that resolves in a bone-dry finish. There’s just a little more richness and a slightly softer finish and that extra time in bottle made this just that much more delicious. A blend of 60% Chardonnay and 40% Pinot Noir (disgorged December 2025), this Méthode Champenoise sparkler is sourced from sustainably certified estate vineyards in the Seneca Lake AVA—Chardonnay Clone #4 from Terra West Vineyard and Pinot Noir from Round Rock Vineyard. Hand-harvested and whole cluster pressed, each variety was fermented separately and aged for 12 months in stainless steel before blending and spending 5 years en tirage.
